By Faina Matveeva When condensed chicken noodle soup and ramen just can’t cut it, you need some quick and easy foods that you can make to last you through your busy schedules. Since I’m a student, I typically prepare a lot of food at the beginning of the week and pick at it between classes, meetings, and study sessions until the weekend when I have more time to cook. Without further adieu, here are a few quick recipes for you to try this year—in accordance with my micro-resolutions, they’re all just a little bit healthy! Brussel Sprouts and Bacon Preparation: 5 minutes Cooking time: 25 minutes Ingredients: 1 bag brussel sprouts 1 baggie of Bacon Bits Salt, Pepper, Olive Oil to taste Directions:
Lettuce Chicken Wraps Preparation: 30 minutes Ingredients: 1-2 Chicken breasts, marinated in teriyaki or barbecue sauce one day beforehand Head of Lettuce Tortilla strips, prawn chips Directions:
Crockpot Chicken Enchilada Soup Preparation: 10 minutes Cooking time: 4-6 hours Ingredients: 2 prepared chicken breasts (about 1 pound), shredded (I bought a rotisserie chicken from Kroger for about six bucks and just shredded it up—shortcut!) 2 cups chicken stock 1 8 oz package of cream cheese 2 cans black beans, rinsed and drained 1 can diced tomatoes, with juice 1 can whole kernel corn, drained Salt, pepper, and garlic powder to taste Chopped fresh cilantro, shredded cheese, or tortilla strips/chips as garnish Feel free to add whatever vegetables suit your fancy--I typically add strips of avocado, green pepper, onions, or jalapeno if I’m feeling adventurous! Directions:
**Sidenote: if you haven’t already done so, put a slow cooker on your Christmas/birthday/to buy/splurge/impulse internet shopping list, because it is so, so worth it! Crockpot recipes are so quick, easy, and make a few servings to last you a while. I’m not the most culinarily gifted girl in the world, and these recipes sure do make me look impressive!
